Description
This simple, yet gourmet dish is sure to be a family favorite!! The bubbling, melted cheese and crisped ham on top take this baked chicken meal to the next level. You can also prepare it in smaller bites and serve as an appetizer at your next event. All the flavors of Chicken Cordon Bleu, but with a new look, no breading, and less work! In traditional Chicken Cordon Bleu recipes you’re advised to pound your chicken. Since this recipe is prepared open-faced, you can skip this step! The complimentary sauce is only made up of two ingredients– Greek yogurt and your favorite honey mustard. Fresh cultured yogurt boosts your gut with healthy probiotics and packs in even more protein. Ingredients
- 2 lbs boneless chicken breasts or thighs (pictured with thigh meat)
- 4 slices deli ham (nitrite-free) thin sliced
- 4 slices Swiss cheese or another cheese of your choice
- 1/2 tsp garlic powder
- 1/2 tsp salt and pepper to taste
- 1 tsp of your favorite seasoning (I used Perry’s in this recipe)
- 1 tsp dried parsley or chives or 1 Tbsp fresh chopped
- 1.5 Tbsp honey mustard (or a combo of mustard and honey)
- 1/3 cup plain Greek yogurt
- Olive oil to drizzle
Instructions
- Preheat oven to 350′.
- Line a baking sheet with parchment paper.
- Rinse chicken and pat dry. Make slits with a knife about 3/4 of the way through chicken. Then place chicken on parchment paper.
- Cut ham and cheese slices into smaller pieces and arrange evenly in cut chicken.
- Sprinkle with salt, pepper, garlic powder, and your favorite seasoning. Drizzle with olive oil.
- Place stuffed chicken in oven and bake for approximately 30 minutes. Check to be sure it is baked through and juices run clear.
- Prepare your sauce while chicken is baking. In a small dish mix together yogurt and honey mustard.
- When chicken is done, remove pan from oven. Arrange chicken on a serving plate and sprinkle both chicken and sauce in the dish with parsley or chive.
- Cut chicken into bite-sized pieces to dip in sauce and enjoy!
