I could eat a serving of this delectable, fresh and simple combination, every day of my life!  Once you find a good quality black truffle sea salt, it just might become an addition to so many dishes on your table!  The black truffle adds a new complexity of flavor to your dish! You can get it in the form of an oil or even whole truffles themselves, although quite pricey. Ok, I’ll confess, I’m addicted to truffles. In this recipe, I used a little bit of good quality extra virgin olive oil too.  If you are unfamiliar with them, black truffles are fungi that grow especially well at the base of oak or hazelnut trees in Southern Europe, specifically in Southwestern France.  Of course, this is why you’ll often find foods from this region of the world accented with this unique flavor!

I chose to pair this with radishes from the farmer’s market today, which are an amazing little powerhouse of nutrition in each and every crunchy little bite! They are loaded with vitamin C. They’re also a good source of riboflavin, B vitamins, calcium, magnesium, copper, and manganese, as well as dietary fiber, folate and potassium.  Radishes are known to help detoxify you’re your blood, especially benefiting those suffering from osteoarthritis.

These little root vegetables also contain anthocyanin, a flavanoid found in blueberries, helping in heart disease prevention.  Try this as a simple fresh side to your dinner tonight!

Ingredients

  • 1 bunch of radishes
  • 1-2 Tbs extra virgin olive oil
  • Black truffle sea salt to taste

Directions

  1. Cut washed radishes into quarters and place in a dish.
  2. Drizzle with 1-2 Tbs olive oil and truffle salt to taste.
