Here is your perfect at-home dinner date. Open a bottle of wine and cook this up with your significant other. You’ll love this elegant wind-down meal in the midst of the busy holiday season. It’s simple to create to perfection and comes with less crowds and significantly lower cost than your favorite steak house! Best part–you don’t even need to remember to make the reservation. Take a moment not to feel rushed!

I served this steak and mushroom dinner with roasted rosemary potatoes and roasted asparagus. If splitting up the tasks with a partner, you can choose to have one person focus on the steak and mushroom main course while the other prepares the potatoes and asparagus sides simultaneously. Of course you can always make the whole meal on your own, but it’s nice to actually share the bottle of wine. I add a touch of red wine to the mushrooms! You will need 2 oven racks or 2 baking sheets or pans that can sit side by side in the oven to have everything done at the same time. Serves 4

Preheat oven to 425

Ingredients

Rosemary Potatoes

  • 1 lb gold or red potatoes
  • 2 tsp rosemary
  • salt and pepper
  • olive oil

Directions

  1. Wash and cut potatoes into bite-sized pieces (or quarter)
  2. Lay on a parchment paper-lined baking sheet. Drizzle with olive oil.
  3. Sprinkle with rosemary, salt and pepper.
  4. Bake for about 30 minutes in the preheated oven.[/directions]

Roasted Asparagus

Ingredients

  • 1 lb asaparagus spears
  • olive oil
  • salt and pepper[/ingredients]

Directions

  1. Wash and cut touch ends of asparagus off (about 1.5 inches)
  2. Lay on a parchment paper-lined baking sheet. Drizzle with olive oil
  3. Sprinkle with salt and pepper
  4. Bake for about 12-15 minutes in the oven (second half of the time potatoes are baking)[/directions]

Sautéed Mushrooms

Ingredients

  • 1 lb sliced mushrooms
  • 2 Tbs Olive oil or Avocado oil
  • 2 Tbs butter
  • 1 clove of garlic crushed
  • 1 Tbs red wine (Perfect excuse to open that favorite Red Wine;)
  • 1 Tsp Worcestershire sauce
  • salt and pepper to taste
  • fresh cut parsley to garnish when mushrooms are on top of steak[/ingredients]

Directions

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add in mushrooms, garlic, Worcestershire sauce, salt, pepper, and wine.
  3. Sauté mushrooms, tossing to cook evenly until mushrooms are browned and tender.
  4. You can reduce heat to simmer after a few minutes. (this will take about 10 min)
  5. Set mushrooms aside in a covered dish.
  6. Now prepare Steak.[/directions]

Garlic Steak

Ingredients

  • 5 lbs steak (Your choice of cuts. I preferred a grass-fed high quality ribeye)
  • 5 garlic cloves, crushed
  • 2 Tbs olive oil or avocado oil
  • 2 Tbs butter
  • salt and pepper
  • Spread crushed over [/ingredients] and sprinkle both sides with salt and pepper.

Directions

  1. In your skillet, you cooked the mushrooms in, heat olive oil on medium-high heat.
  2. Add steaks and cook for about 5-6 minutes on one side uncovered.
  3. Cook for at least 6 minutes on the other side. Cook to your preferred temp. I like to check to make sure the internal temp reaches 140, but we also like them medium well.
  4. Melt butter over steaks in skillet.
  5. Place steaks on plate and top with mushroom mixture. Garnish with parsley.
