Crisp Cucumber Salad

This is a fresh side dish that takes only a few ingredients, and just minutes to make. It sits well in the fridge and is a great accent to any meal. Actually it’s better if it sits in the fridge for an hour before serving for the favors to marinate. This is a perfect accompaniment to my main dish recipe “Asian Garlic Ginger Crockpot Chicken”.


  • 1 large slicing cucumber or 4 Persian cucumbers
  • 1/2 onion
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • salt & pepper to taste


  1. Thinly slice cucumber.
  2. Thinly slice 1/2 onion.
  3. Place both in a serving bowl and pour vinegar and olive oil over.
  4. Then sprinkle with salt and pepper.
  5. Toss ingredients!
