Fresh Spinach & Salami Caprese Salad

A little classic fresh Italian flavor makes this a perfect, yet simple lunch or dinner side. Nearly 10 grams of protein, plenty of vitamins, minerals, including folic acid, and lots more. The classic trio or fresh whole milk mozzarella, fresh basil leaves, and juicy ripe red tomatoes are accented with a few additional here. Your necessary greens and a tasty thin-sliced cured meat, which adds a bit of saltiness, makes this salad so satisfying!  (Serves 2)

Ingredients

  • 3 cups spinach leaves (add more spinach to bulk it up if desired)
  • 1 large tomato cut into wedges
  • 1 oz. sliced fresh mozzarella cut into chunks
  • 10 basil leaves chopped
  • 0.5 oz thinly slices salami or other cured meat
  • 2 Tbs (or more) extra virgin olive oil
  • 2 Tbs balsamic vinegar
  • salt and pepper to taste

Directions

  1. Divide spinach between 2 plates, creating a bed of greens
  2. Top with tomatoes
  3. Top with mozzarella
  4. Slice slam into strips and place on top
  5. Top with chopped basil leaves
  6. sprinkle with salt and pepper to taste
  7. Drizzle with balsamic and oil
