Piña Colada Popsicles

Description

Ah summer…It’s time to embrace all those tropical flavors and cool treats! These pineapple and coconut cream popsicles are sweetened only with a little honey and pineapple juice for a healthy dessert, which makes both the kids and adults happy. To reduce the carbs and calories even further, I have some alternative added sweetener suggestions below.  These popsicles are high protein, an excellent source of probiotics with a quality yogurt, contain no refined sugar, but load you up with healthy fats for brain health. Enjoy these treats guilt-free!  They even make a take and go breakfast option on a warm day. This recipe makes 8 standard popsicle mold treats using the  ZOKU popsicle mold

You may even choose to add a shot or two of rum to your batch for an adult Happy Hour treat, like a mini frozen Piña Colada!


Ingredients

  • 1 14 oz. can coconut cream or coconut milk
  • 8 oz crushed pineapple (You may use the same amount of fresh pineapple. You would just need to use a blender to pulse it first.
  • 3 Tbsp honey or for a reduced carb option and zero calories in added sweeteners, try liquid  Monk Drops Monkfruit sweetener drops or liquid  SweetLeaf Stevia drops
  • 8 oz container plain Greek yogurt
  • 1/3 cup shredded sweetened or unsweetened coconut

Instructions

  1. Mix all ingredients well in a bowl.
  2. Using a spoon, evenly distribute mixture between popsicle molds, such as ZOKU Classic Popsicle Molds. If you don’t have a popsicle mold use plastic cups and wooden popsicle sticks.
  3. Freeze for at least 4 hours.

Notes

The nutrition label reflects the addition of honey as an added sweetener. If you choose to replace the honey with liquid stevia or Monkfruit sweetener, you can reduce the sugar listed to 22 g.
