What better way is there to celebrate Summer than enjoying a frozen treat in the heat?! These popsicles are everything you could want to satisfy that sweet, but guilt-free craving. Our family is currently living in North Texas, where Summer temps often creep up over 100 degrees! So, my kids are always looking for refreshing ways to cool off with their friends! Treats are usually packed with sugars and other unhealthy ingredients, but not these! Today I bring to you a decadent, creamy, frozen treat loaded with berries and zesty lemon. It tastes like your favorite frozen cheesecake. The best part is, this dessert is fancy enough for guests and healthy enough for your kiddos to enjoy on a regular basis. I chose to use the all natural low-carb sweetener, Confectioner’s SWERVE, in this recipe, but you may also opt for regular powdered sugar or an alternative, like agave nectar. You’ll need a good blender for this recipe. I love my VITAMIX Blender, but any powerful blender will do. You’ll also want popsicle molds. I recommend the ZOKU Popsicle mold which I have used for years and is available on amazon. It’s cost effective, dishwasher safe, and very durable. You may also want to make a mini popsicle version of this recipe. Sometimes a tiny popsicle means a lot less melted mess for littles! I like these 2-PK SILICONE trays, which are good for freezing or baking. These are the same ones I use in my Instant Pot Egg Bites recipe. This recipe is easy to adapt to your own tastes and lends itself to lots of variety and substitutions. I choose to you “The Good Culture” cream cheese in this for extra probiotics and nutrition, but you can go for any cream cheese for that perfect texture.
Ingredients
- Popsicle mold
- Blender
- 1 cup + 1/2 cup mixed berries, separated
- 1/2 teaspoon lemon extract or 2 teaspoons lemon juice
- 6 oz. cultured cream cheese or regular cream cheese block
- 1/2 cup powdered Swerve, powdered sugar, or other sweetener to taste
- 1/2 cup heavy cream or coconut cream
Instructions
- Chop 1/2 cup berries or use small blueberries, set aside.
- In a blender add remaining 1 cup berries, lemon extract, heavy cream, Swerve or other sweetener, and cream cheese. Blend until it looks like a smoothie.
- pour into popsicle mold and freeze for at least 4 hours.
- When ready to eat, remove from freezer and run popsicle in mold under water until you can remove it.
- Enjoy!
