Happy Holiday weekend smoothie bowl! Incredible– Sweet, tangy and oh so healthy and cleansing after a couple of days of Thanksgiving Indulgences. Kids loved this refreshing bowl too! This has a thick soft-serve ice cream consistency, perfect in a bowl with a spoon and your choice of toppings.
- 1 cup vanilla yogurt (or 1 cup plain yogurt and 1 Tbsp honey)
- juice of 1/2 lemon
- 1 cup frozen peaches
- 1 Apple cored and sliced
- 1 inch piece peeled fresh ginger
- 2 cups loosely packed kale, spinach, or other greens
- 1 Tbsp chia seeds
- Place ingredients in a powerful blender in the order listed. I prefer my vitamix with tamper. If you don’t have a tamper or need more liquid for easier blending, add a bit of water or almond/coconut milk. I topped with candied dried ginger, walnuts and green apple slices.
